Researcher Michiel van Galen uses the Food Prices Monitor to analyse the development of prices of chicken, pork, fruits and vegetables. He checks the fees paid to the farmer, the processing costs, and the pricing in the supermarket. Three prices used to calculate who earns the profit. But, there is more than one chain. Take, for example, the organic sector, the butcher and the greengrocer—each with their own prices. Moreover, developments in the global market may affect export prices. This makes profit distribution within food chains a complex issue.
